Simon Lawson













Simon Lawson first started cooking at a very early age in his Grandmothers kitchen. He used to sit on the kitchen bench and help her wash rice, this was where he started a life long passion for food. After cooking professionally for over fifteen years, he is realising his dream to open his first restaurant. Passionate about good food, organic produce and sustainability, he believes that organic food is better for you, tastes better and is better for the world we live in.

ANCIENT GRAINS

are highly digestible grains. They are the ‘original’ ancient grains.

Spelt

There is evidence that spelt was cultivated by ancient civilizations both in Europe and the Middle East thousands of years ago. It is mentioned in the Old Testament and in various Roman texts.

Spelt has a delicious nutty flavour, high in fibre and has a higher protein content than wheat. Spelt is a low gluten grain.

Amaranth

The Aztecs and Incas have for centuries honoured the rich nutritional benefits of amaranth because it gives them amazing strength and sustenance. Indeed these little wonder seeds are high in minerals, fibre and proteins with an amino acids profile perfect for the human body. Amaranth is suitable for those avoiding gluten.

Quinoa

Quinoa is the “mother grain” of the Andes that has been keeping the Incas strong and robust. Royal Quinoa, the variety still prized today for its higher protein content and is gluten free. Quinoa has a light, fluffy texture when cooked, and a wholesome mild, slightly nutty flavor.
